Espumas de Cacao

Espumas de cacao is a food experience, in a pop-up bar format, reclaims the cultural, organoleptic, and chemical properties of cacao foams, used as a topping , in drinks of pre-Hispanic origin, made with cocoa, grains, seeds, flowers and herbs, and which are still traditional in various populations of Oaxaca in southern Mexico.
These drinks, due to their chemical and nutritional components, are considered restorative foods and are generally consumed in celebration contexts.
Their recipes and techniques have great cultural and culinary value, because they integrate positive practices such as the use of local and original ingredients, minimal processes like the natural fermentation of cacao beans.
